A tid bit of information. This here plate is full of Tripe. What is Tripe you ask? Oh, just the lining of a cows stomach chopped up and covered in a tomato sauce. Yea. It sold out instantly. I figured after 24 years of running away from it I should try it. Ugh. Not my cup of tea. But Shaz liked it!

    Chinese dim sum (lunch) have a tripe dish too!!! Drenched in some marinade. I actually like it.

    Considering the first time I had tripe it was a squishy gross surprise in my pho soup, this was pleasant.
