Snowy Sickness

 

Hello World.

I’m sick. It snowed. I had to cancel baking day with my cousin and now I’m sad.

I sound like a man, which is probably why Chad won’t let me talk.

We moved another 6 boxes of stuff from our apartment yesterday and put them into storage, aka – my uncles crawl space. The apartment feels empty now.

Empty and cold and sick and snowy.

I watched 9 episodes of the Golden Girls last night and then fell asleep during the last one. I never fall asleep on the couch, thats how sick I am right now. Le sigh.

I’m on the ‘keep getting worse’ phase of the sickness. Hopefully all day in the couch will cure me today.

Sick co-workers + 2 doors we go in an out 100 times a day = sick Danielle. WASH YOUR HANDS, WOMAN!

I know, I know.

Ok, now I’m just getting delusional.

I need to go lay down.

I am certifiably insane today.

We met with our realators last night. Now my head is spinning with ideas, and things I want, and things I need, and I want to do everything in a matter of minutes. I guess this is why I married Chad, he is the total opposite.

If it was up to me, I probably would have bought a place last night, which clearly would have been a bad idea.

I just get emotional about things. I get attached. I get ideas about how I could fix this and change that and then the next thing you know, I’ve designed the next 20 years of our lives in a house we haven’t even seen in person.

I am not rational. At least not today.

I got no sleep last night because my head wouldn’t stop talking. This only adds to today’s insanity.

I have never needed a yoga session so badly in my life.

The Greek Goddess

Making Greek food is one thing I love to do. While I really only have 3 recipes in my repertoire, they are my favorite 3 things to make. I’ve become so accustom to the way I make them that I don’t like ordering them at restaurants because they don’t taste as good as when I make them! So, with out further  adieu…my ‘famous’ Greek Potatoes, Greek Salad, and Chicken Kebabs!

Greek Lemon-Oregano Potatoes

These will be the best potatoes you have ever eaten.

Ingredients

  • 2 large Russet potatoes, peeled
  • 1 cup water
  • 1/2 cup olive oil
  • 1/2 cup lemon juice
  • 4 tbsp dried oregano
  • salt and pepper to taste

We find this is the perfect amount for 2 people. Estimate a potatoe per person.

Steps

Set the oven for 500 degrees.

Peel the potatoes cut into large chunks (see pictures). Place them in a baking dish making sure they all lay in a single layer.  

Add water, olive oil, lemon juice, dried oregano, salt and pepper. Toss potatoes until well coated.

Bake uncovered about 50 minutes, until fork-tender and brown on the edges. Turn potatoes halfway through for even browning, and you can add water if all the liquid has been absorbed.

Then commence stuffing your face with the most amazing potatoes of your LIFE!

BBQ’d Lemon-Oregano Chicken Kebabs

This recipe we got from our Weber Grill/Cook Book.

Ingredients

  • 2 chicken breasts, cubed
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tablespoon dried oregano
  • 2 garlic cloves, minced
  • 2 teaspoons paprika
  • salt and pepper to taste

Steps

In a medium bowl whisk the marinade ingredients.

Cut chicken breasts into cubes and place them in the bowl to marinade making sure they are all evenly coated. Cover with plastic wrap and refrigerate 1 to 2 hours.

Before grilling skewer the chicken to make 4 even kebabs.

Brush the cooking grates clean. Grill the skewers over direct high heat, with the lid closed as much as possible, until the meat is firm and the juices run clear, 6 to 8 minutes, turning once or twice.

Hello Veggie Delight!

Ingredients

  • 1 large red pepper
  • 1 cucumber
  • 1/2 red onion
  • 1 cup cherry tomatoes
  • 1/2 cup Feta cheese
  • Olive Oil and Lemon juice to taste
  • Clubhouse Greek Seasoning

Steps

Chop all the veggies up into small chunks. Do the same with the Feta cheese. Toss with olive oil, lemon juice, and seasoning to taste!

This is really recipe is really easy, and also leave itself open for interpretation. Feel free to add olives, leave out one of the veggies you don’t like, or add more! The Greek seasoning tastes great and comes with some other Greek recipes to try.

Elisa (our friend who is here from Italy for a few months, remember?) came over for dinner last night because she needed Chad to look at her computer. It was her first time ever having Greek food, other then eating a Pita. She loved the potatoes, as do every person I have ever served them too. I’m telling you people, you need to make these potatoes! Unless you don’t like potatoes, or lemon, or oregano. Then that would kind of be sad :(

I think I’ve told the story before.

Every year we go up to the Seminary of Christ the King in Mission. My Dad went to High School there and he still keeps in contact with some of the Monks who were his teachers and such. My Parents visit a couple times a year, and on one of those trips Chad and I usually tag along.

I’ve been going to Mission since I was a kid, so I look fondly on it. The grounds of the seminary/abby are beautiful with lots of paths to walk. My favorite part is hanging out in the sitting rooms. Everything in the abby was decorated in the 70s and never touched. This makings vintage photo shoots amazing. You might remember this set that I posted last month.

Now that I know how to make photos look vintage using photoshop, I thought it would be the perfect opportunity to try out my skills with the pictures I took the last time we were up there. I love the way these pictures turned out.

My favorite thing in the entire world is this green and blue lamp. I know I have talked about it a million time, but every time we go up there I pine over it. I mean, honestly, I bet they wouldn’t have a problem with me buying it off of them. What do they care about a 40 year old lamp!? I love this lamp with all my heart. We have had a 25 year love affair. I can’t even begin to tell you what this lamp means to me. Do I have a bizarre obsession with this lamp? Yes, but can you blame me?

I want to base the colours and design of our living space around this lamp when we move. Wouldn’t it be magical?

My cousin who also went to school at the Abby says he can probably talk to someone about me purchasing it. I am definitely thinking about taking him up on his offer.

I’d Tumblr For Ya

Yup, I got Tumblr.

I thought about it for a long time. I didn’t really get what it was all about, but after chatting with Shaz, and realizing that some of my favorite sites are tumblr pages, I figured I might as well join the craze.

I’ll mainly be using my Tumblr as an extension of my Twitter. It will fulfill my ‘visual’ needs.

As I said in my Tumblr Header, I’ve been scrap booking my favorite magazine images since I was a kid. I would spend Summers going through all the magazines I had saved up that year and would go on a tearing spree. I have numerous scrapbooks filled with my favorite images. Tumblr will be my digital scrapbook.
